My current favorite is the "My Blackboard" App. It's simply a blank slate with different colored chalk. We've been using this app a lot during math lately since we have been focusing on addition and word problems.
Here's one of my kiddos writing math sentences on the document camera using dominos.
The kids also came up with their own addition problems by illustrating them with shapes.
We also take turns using our addition machine first and then illustrating it on our iPad. In our addition machine we've been using pink and red hearts for Valentine's, but today we started using colored bears. The kids love making up random story problems for their classmates to solve. An Example from one of the kids today: "I invited 3 red bears to my birthday party. And then 2 red bears showed up." Then they wrote it on the app under the document camera and the rest of the class would shout out the answer.
And my current ELA favorite app would be "Word Wizard". This app has a movable alphabet that is super fun for the kids to work with me in small groups to create and build popcorn words and rhyming words, etc.
